Ribolla Rebula 2018
This Rebula shows an extractive, golden yellow colour with an amber hue and a dense texture.
The bouquet evokes ripe red apple, apricot, yellow fig, yellow plum, orange peel, papaya, carambola and yellow rose. Note of herbs reveals rosemary, anise, finishing with notes of almonds, hazelnuts and toffee.
The palate feels soft, and the alcohol nicely underlays its structure. Its freshness is crisp and well balanced by the softness of the wine, we detect mineral salinity, and the mouth is dried by the perceptible tannins, which act slightly spicy. It's thanks to these properties that the mouthfeel is balanced.

Vineyards: Java vineyard: Southwest exposure, 6000 plants/ ha; age of vineyard 15 - 25 years, Mono Guyot training system
Soil: Opoka soil (marl & lime stone)
Planting system: 2,3m x 0,7
Yield per hectare: 6000 kg
Harvest: Hand picked in last week of September and first week of OctoberVinification process: Grapes are desteemed and put in vinificator with skins where the fermentation begins with indigenous yeasts. After 2 weeks of maceration, grapes are then pressed and racked into the barrique barrels.
Aging: Barrique (225 l French oak barrels) for 18 months. Bottling: April 2020

A harmonious wine that will only upgrade its elegance through maturation. It can be enjoyed now but will evolve over the coming years. It will go well with pasta and risottos with a touch of the sea or white meat.
